Pasta: The ultimate comfort food!

So, tell me… Is there anyone who doesn’t love pasta? Personally, I love them in all shapes, colors, and flavors. I think you already know this since many times I have mentioned it to you. Also, a favorite pasta recipe of mine that you should definitely try is the one with spinach and homemade cashew cheese. It’s summery, and I’m sure you’ll love it! Find the recipe here! Pistachio Sauce

Nuts are a material that, since becoming vegan, I have started to use a lot in my daily life. In addition to their nutritional value, they are also a fantastic base with which we can make many salty and sweet recipes. For example, I often choose nuts – always raw and unsalted – to make a variety of sauces for my much-loved pasta. Adding various ingredients and natural spices creates unique flavors and dishes with many colors, which I like a lot! So, today we are making a delicious, nutritious, and beautiful green pasta recipe!

Vegan Pistachio Sauce Pasta

Pasta is on today's menu, which I love very much, as you already know! So, I have made a delicious sauce with a super taste and nutritional value, and at the same time, a fantastic color too! So let's make a straightforward recipe for our lunch or dinner!

Ingredients
  

  • 500 g pasta
  • 400 ml soy milk (sugar-free)
  • 115 g pistachios (raw and unsalty)
  • 100 g spinach leaves
  • 5-6 pepermint leaves
  • 1 dry onion
  • 3 cloves of garlic
  • juice of ½ lemon
  • 45 g vegan parmesan
  • 2 tbsp nutritional yeast
  • 1 tbsp salt
  • 1 pinch of pepper

Instructions
 

  • We boil the pasta according to the instructions on the package.
  • Then, we clean the onion and the garlic cloves.
  • We add all the ingredients to a blender and beat them for 3-4 minutes.
  • As soon as the pasta is ready and after we have drained it, we add the sauce from the blender to the hot pot and mix very well to heat the sauce and spread it all over the pasta.
  • Serve and enjoy!
