Vegan Pistachio Sauce Pasta

Pasta is on today's menu, which I love very much, as you already know! So, I have made a delicious sauce with a super taste and nutritional value, and at the same time, a fantastic color too!

- 500 g pasta
- 400 ml soy milk
- 115 g pistachios (raw and unsalty)
- 100 g spinach leaves
- 5-6 pepermint leaves
- 1 dry onion
- 3 cloves of garlic
- juice of ½ lemon
- 45 g vegan parmesan
- 2 tbsp nutritional yeast
- 1 tbsp salt
- 1 pinch of pepper
- lemon zest
Boil the pasta according to the instructions on the package.
Then, clean the onion and the garlic cloves.
Add all the ingredients to a blender and beat them for 3-4 minutes.
As soon as the pasta is ready and drained, add the sauce from the blender to the hot pot and mix very well to heat the sauce and spread it all over the pasta.
Serve with extra pistachios and lemon zest.
