What is ramen?
Ramen is a Japanese soup with noodles, which is very popular both in Asia and in the rest of the world, where it has become famous over the years. The truth is that there is a confusion between China and Japan for the origin of this dish. I have read a lot about ramen’s roots, as it is a meal that I love very much. In one of these searches I have learned that ramen were transported by Chinese immigrants to Japan in the late 19th century as a variation of noodle soup. Be that as it may, ramen is loved by many in every corner of the world and gives us great ideas for new, unique flavors. There are many types of soup depending on the ingredients we use.
What is miso?
Miso is a soy bean paste and is considered one of the most exciting gastronomic ingredients in the world. Specifically, the umami taste of miso is what makes this material so popular. Its natural, strong taste along with a slight sweetness make it irresistible! Miso, in addition to soy beans, can contain brown rice, barley and many other ingredients. In Japan it is used especially in soups, but we can say that it is a material suitable -apart from soups- for sauces, marinades, etc. Also, in addition to its distinctive taste, miso lowers blood pressure and strengthens our immune system. So, recently, I found myself in a store with organic and vegan products in Thessaloniki and found a miso in a shelf. Without a second thought I decided to make something special for the meal of the day!
Vegan Miso Ramen with Vegetables
Ingredients
- 280 g brown rice ramen
- 2 fresh onions
- 1 dry onion
- 1 green pepper
- 1 red pepper (sweet)
- 1 clove of garlic
- 3 tbsp sesame oil
- 3 tbsp soy sauce or tamari
- 2 tbsp brown rice miso
- 300 ml soy milk
- 1 tbsp Himalayan salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp ginger
- 1/2 tsp sugar
- bukovo (optionally)
- white sesame (optionally)
Instructions
For the ramen:
- We add the ramen in 1.5L of boiling water. Once they start becoming softer in texture, mix them a little with a fork to separate the pieces.
- We let them boil for 2-3 minutes.
- Then, we drain them in a colander and pour cold water over them. We make sure to keep the quantity of a large ladle, because we will need it later.
For the sauce:
- We peel and finely chop the onions (fresh and dry), peppers and garlic.
- We heat the sesame oil in a pan.
- We add the onions and peppers and fry them for 4 minutes.
- Last, we add the garlic, so that it doesn't become bitter and stir it to give us all its aromas.
- Then, we pour the soy sauce and the miso into the pan. We mix them well.
- We add the salt, the garlic powder, the onion powder, the smoked paprika, the ginger and the sugar and mix well.
- Finally, we add the soy milk, the corn flour and the broth from the ramen, we kept from the previous step.
- We close the lid and let the ingredients blend smoothly for 10 minutes, keeping the burner at a moderate heat.
- We mix the ramen with the sauce, so that it spreads everywhere.
- Serve optionally with bukovo and white sesame.
