How about peas?

Basically, let’s start with the fact that peas are a very misunderstood food! I always remember my mom, when I was a kid, begging me to eat even a little peas. If you ask me, I honestly don’t know why… It is clearly a very good source of fiber and protein and many more vitamins and minerals (but nutritionists should better talk about all these stuff). It is also a wonderful raw material with which you can make many recipes. Today we will see the classic one of course, while I promise you for many more in the future. Besides, now I can say that I love peas!

Classic or Modern?

Here is the question! I think that an average solution is the best, for me at least… So, I decided to replace the classic potatoes with sweet potatoes, which are a rich source of vitamins and minerals as well. I, also, added some more favorite vegetables, such as carrots and corn, and finally came up with a delicious recipe, very close to the one my mom used to make with some of my own changes.

Ingredients
  

  • 500 g peas
  • 3 carrots
  • 2 sweet potatoes
  • 2 red peppers
  • 1 onion
  • 100 g corn
  • 200 g tomato sauce
  • 5 tbsp. olive oil
  • 1 tbsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. curry
  • 1/2 tsp. sugar
  • 1 pinch of freshly ground pepper
  • 1 cube of vegetables

Instructions
 

  • Chop finely the onion.
  • Cut the potatoes and carrots into smaller pieces.
  • Add 3 tablespoons of olive oil and when it heats up, add the onion, sweet potatoes, carrots, corn and peas in a pot and mix them.
  • Then, add the tomato sauce and 500ml hot water.
  • Chop the dill and put it in the pot.
  • Add the salt, sugar, garlic, pepper, curry and vegetable cube.
  • Let them for about 25 minutes.
  • Turn off the heat and add the remaining 2 tablespoons of olive oil.
  • Enjoy!

Notes

Extra Tip: Optionally, you can add vegan feta cheese.
