Lovely Buddha Bowls

The truth is that I love Buddha Bowls very much! In recent years I learned about their existence and started making them. I can say that it is a very convenient choice since they are straightforward to create, contain many ingredients, and have great nutritional value, while at the same time, the combinations are countless. This means that we can have different tastes and a new dish to try every day. At the same time, Buddha Bowls are the main dish since they have a high nutritional value, depending on the combinations. At the same time, they can also be considered an appetizer on our table, replacing our salad on the menu.

Quinoa Buddha Bowl

I would say that quinoa, in general, is somewhat misunderstood since many do not love it or, rather I should say, avoid it. I was one of them in the past since I wasn’t fond of it at all. But, gradually, I started using it more and more in my recipes and adjusting it accordingly, so I began to like it. An important tip I want to give you about quinoa and its cooking is rinsing. Before doing anything, we have to put it under the tap and rinse it with running water to remove its bitter taste. Then, we can cook it in water or vegetable broth, adding our favorite vegetables. Ingredients
  

For the bowl:

  • 120 g chickpeas
  • 80g quinoa tricolor (boiled)
  • 1 sweet potato
  • 1 dry onion

For the sauce:

  • 115 g soy yogurt
  • 65 g tahini
  • juice of ½ lemon
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 pinch of freshly ground pepper

Instructions
 

For the bowl:

  • We preheat the oven to 180°C.
  • We peel and dice the sweet potato.
  • We place a piece of parchment paper on a baking tray and add the sweet potato.
  • We bake for 20 minutes and then remove the pan from the oven.
  • We clean and cut the onion into thin strips.
  • We add the boiled chickpeas, the boiled quinoa, the sweet potato pieces, and the onion to a deep dish/bowl.

For the dressing:

  • We add all the ingredients to a bowl and mix very well.
  • We pour the dressing over the bowl with the rest of the ingredients and mix very well.
  • Enjoy!
