For the bowl:
- 120 g chickpeas
- 80g quinoa tricolor (boiled)
- 1 sweet potato
- 1 dry onion
For the sauce:
- 115 g soy yogurt
- 65 g tahini
- juice of ½ lemon
- ½ tsp garlic powder
- ½ tsp salt
- 1 pinch of freshly ground pepper
For the bowl:
Preheat the oven to 180°C.
Peel and dice the sweet potato.
Place a piece of parchment paper on a baking tray and add the sweet potato.
Bake for 20 minutes and then remove the pan from the oven.
Clean and cut the onion into thin strips.
Add the boiled chickpeas, boiled quinoa, sweet potato pieces, and onion to a bowl.
