In the summer, most of us are looking for tasty, satisfying, and nutritious meals that don’t weigh us down because of the heat, which in many parts of the world is unbearable. So me too, during the summer months, I choose to create main dishes based on a lot of raw vegetables and, simultaneously, make sure to add my legumes to get the necessary amount of protein that my body needs. This way, I can enjoy my favorite flavors in no time. In addition, I often choose this bowl as a side dish when cooking for my friends. Its classic taste and freshness leave no one unsatisfied.

How to make the ultimate Mediterranean Salad?

Well, things are straightforward since to make the ultimate Mediterranean salad or the ultimate Mediterranean Buddha Bowl, you must go to the nearest supermarket or grocery store and buy fresh vegetables! These will be our base since fresh vegetables are easy to find in the Mediterranean countries, specifically in Greece, where I come from. At the same time, I will also add some chickpeas to my salad, as I want to increase its nutritional value and, of course, make it more satisfying. Finally, the vegan feta adds a flavor note that I want in my meal, while the olive oil sauce, which is very typical in Greece, completes the result.

Summer is not possible without a dish inspired by the Mediterranean! So today, we are making the coolest Buddha Bowl fill us up without "burdening" us. It is ideal either as a meal or as a salad to accompany the main course on our menu.

Ingredients
  

For the salad:

  • 120 g chickpeas
  • 80 g vegan feta
  • 10 cherry tomatoes
  • 5-6 olives Kalamon
  • 2 fresh onions
  • 1 dry onion
  • 1 red pepper
  • 1 cucumber
  • ½ branch of parsley

For the "ladolemono" (olive oil sauce):

  • 50 ml olive oil
  • juice of ½ lemon
  • 1 tsp oregano
  • 1 tsp salt
  • tsp dry thyme
  • 1 pinch of pepper

Instructions
 

For the salad:

  • Clean and chop the cherry tomatoes and the red pepper. Also, clean and slice the onions (dry and fresh) and the cucumber.
  • Chop the parsley and cut the vegan feta into cubes.
  • Add all the ingredients for the salad to a bowl.

For the "ladolemono" (olive oil sauce):

  • Add all the ingredients to a bowl and mix well.
  • Pour the olive oil over the plate with the rest of the ingredients.
  • Enjoy!
