What is Tofu?

Tofu is something like a “treasure” I would say, since it is a material for a lot of dishes. And when I say a lot, I mean it! It is ideal for breakfast, lunch, dinner and even for dessert. More specifically tofu is a soy product. It is made from soy milk and is quite popular in East countries, where people tend to follow a vegetarian lifestyle. Tofu is an ideal source of protein and omega-3 fats, while it is low in cholesterol and low in carbohydrates. In short, it’s the ideal ingredient that should not be missing from our diet.

Is Vegan Scrambled Eggs possible?

Of course it’s possible and you don’t have to worry, because the scramble tofu is as delicious as the eggs, but much healthier. When I was a kid, my mom used to make such dishes quite often, such as scrambled eggs, but also kayanas -a traditional Greek plate-, which we will definitely see later in another recipe. So, wanting to “relive” this memory and of course having enough tofu in my fridge (as I mentioned above, tofu is an ideal material, so I make sure that I always have some in my fridge), I decided to make the most delicious breakfast of all time. The Best Tofu Scramble (Vegan Scrambled Eggs)

Ingredients
  

  • 350 g extra firm tofu
  • 1 yellow onion
  • 1 fresh onion
  • 100 ml soy milk
  • 2 tbsp. vegan butter
  • 2 tbsp. nutrinional yeast
  • 1 tsp. Dijon mustard
  • 1 tsp. salt
  • 1 tsp. smoked paprika
  • ½ tsp. turmeric
  • ½ tsp. onion powder
  • tsp. garlic powder
  • 1 pinch of freshly ground pepper

Instructions
 

  • Peel and chop the onions and clove of garlic.
  • Heat the butter in a pan and fry the onions for 3 minutes.
  • Add the garlic and continue for another minute.
  • Grate the tofu either with a fork or by hand, add it in the pan and stir.
  • Add the salt, pepper, garlic powder, onion powder, nutritional yeast, turmeric, smoked paprika and mustard and mix well.
  • Add the soy milk, stir, lower the fire and close the lid while waiting for 2-3 minutes.
  • Serve with extra fresh onions, vegan sausages and/or beans and enjoy!
