Halloween Recipe

Another thematic recipe has arrived; since Halloween is approaching, pumpkin should be included in our table. Last week I made chocolate pumpkin muffins, so for today, I decided to make a savory recipe to satisfy everyone’s cravings. And since I am a true pasta lover, I cooked the most delicious and creamy pumpkin sauce to accompany my penne pasta. Of course, you can replace the penne pasta with your favorite pasta or even use legume pasta for a healthier and more nutritious version of the recipe.

How to make a creamy pasta sauce?

The texture of a sauce is one of the essential elements in the success of a recipe. Personally, I love creamy sauces since they offer me a unique taste effect. The most important to remember is that by using water from the boiling pasta and adding it to your sauce while it’s boiling, you can help create that creamy sauce that we desire because of the starch there is in the pasta. So, in addition to all the ingredients I used in this recipe to create a unique pleasure for the palate, I didn’t forget to use some of the water in which I boiled the pasta for a perfect result.

Penne Pasta with Creamy Pumpkin Sauce

The pumpkin season has arrived and a very favorite recipe is waiting for you. Τoday, pasta is on the menu and specifically penne with creamy pumpkin sauce to lick your fingers!

Ingredients
  

  • 500 g penne pasta
  • 400 g pumpkin puree (either canned or homemade)
  • 1 yellow onion
  • 2 cloves of garlic
  • 350 ml coconut milk
  • 3 tbsp. coconut oil
  • 1 tbsp. salt
  • 1 pinch of freshly ground pepper
  • 100 ml boiling water from pasta
  • grated vegan parmesan
  • fresh spinach leaves (for decoration)

Instructions
 

  • Boil the pens according to the instructions on the package.
  • Peel and finely chop the onion and garlic cloves.
  • Add the coconut oil to a pan and once it is hot, fry the onion for 3-4 minutes.
  • Add the garlic and fry for 1 more minute.
  • Then, add the pumpkin puree and salt and mix well.
  • Finally, add the coconut milk and the water in which we boiled the pasta, and after mixing well, reduce the intensity of the kitchen eye to medium and let the sauce "set" for 15 minutes.
  • Once the sauce is ready, serve by adding grated vegan parmesan and spinach leaves.
  • Enjoy!
