Penne Pasta with Creamy Pumpkin Sauce

The pumpkin season has arrived and a very favorite recipe is waiting for you. Τoday, pasta is on the menu and specifically penne with creamy pumpkin sauce to lick your fingers!

- 500 g penne pasta
- 400 g pumpkin puree (either canned or homemade)
- 1 yellow onion
- 2 cloves of garlic
- 350 ml coconut milk
- 3 tbsp. coconut oil
- 1 tbsp. salt
- 1 pinch of freshly ground pepper
- 100 ml boiling water from pasta
- grated vegan parmesan
- fresh spinach leaves (for decoration)
Boil the pens according to the instructions on the package.
Peel and finely chop the onion and garlic cloves.
Add the coconut oil to a pan and once it is hot, fry the onion for 3-4 minutes.
Add the garlic and fry for 1 more minute.
Then, add the pumpkin puree and salt and mix well.
Finally, add the coconut milk and the water in which we boiled the pasta, and after mixing well, reduce the intensity of the kitchen eye to medium and let the sauce "set" for 15 minutes.
Once the sauce is ready, serve by adding grated vegan parmesan and spinach leaves.
