Have you ever tried parsley dip?
Parsley dip or parsley salad is a well-known side dish for ouzo and tsipouro on the island of Syros. The combination of parsley with garlic and onion gives aromas of Greece and puts this recipe among the top choices of all visitors of the Greek islands. This, of course, applies to me, since my first contact with this dip came during my trip to Santorini last summer, where I tried it in a tavern and I loved it very much (See here what I did and what I tried in Santorini). So I decided that what I really needed to do was learn how to do it at home. The classic recipe contains bread and/or potatoes, but I decided to “lighten” it by using soy yogurt.
What can I combine parsley dip with?
The parsley dip is cool and goes perfectly with many dishes and fits many occasions, everyday and festive ones. In particular, you can serve it either as an appetizer accompanied by bread or add it to your pasta or salad creating a unique and very tasty result. Ideally, parsley dip can create a wonderful cold pasta salad or you can add it to your favorite green salad, such as lettuce, convincing even the most loyal “enemies” of salads to try it! In general, if you love parsley, it is definitely a recipe that you should try since the presence of parsley is very strong in this recipe.
Parsley Dip (Syros Island Parsley Dip)
Ingredients
- 50 g fresh parsley
- 500 g soy yogurt
- 5 caper seeds
- 3 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- 1 tsp. salt
- ½ tsp. onion powder
- ⅓ tsp. garlic powder
- ½ tsp. Dijon mustard
- 1 pinch of freshly ground pepper
Instructions
- Spread a cheescloth in a deep food container and add the yogurt, leaving it for 8 hours, to drain from its liquids.
- Once the liquids have been drained from the yogurt, add it in the blender.
- Chop finely the parsley and add it to the blender.
- Then, add all the remaining ingredients to the blender and beat them for 2-3 minutes. (We don't remove the salt from the capers, because it adds a unique flavor to our dip)
- Serve and enjoy!
