Green Beans: Mom’s food!

When I was a kid, I remember my mom making some kind of lathera food every week, since we all loved these dishes. One of them was the green beans. The combination of vegetables with tomato juice and the virgin olive oil made this food irresistible to me. The slices of bread that I “dipped” in the sauce also contributed to the cause. Green beans is a classic, traditional food that will always be on the daily, family menus and will bring to all of us many memories of our younger days.

Everything you need to know about bulgur:

Bulgur is a whole grain cereal and it has its roots in ancient times. It is especially important for our health, as it is rich in protein, fiber and vitamins. Bulgur is also, a very useful raw material, as we can make wonderful breakfast bowls, burgers, salads and much more. In general, it is an ingredient that can be easily incorporated into a recipe. In this particular recipe I decided to combine it with the green beans and make a complete nutritious and delicious meal that will make me remind and miss my childhood moments.

Green Beans with Bulgur: Traditional and Tasty!

Ingredients
  

For the green beans:

  • 450 g green beans
  • 2 carrots
  • 2 green onions
  • 1 onion
  • 1 clove of garlic
  • 200 ml tomato sauce
  • 3 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sugar
  • 1 pinch of freshly ground pepper

For the bulgur:

  • 150 g bulgur
  • 1 tbsp olive oil

Instructions
 

For the green beans:

  • Peel and finely chop the onions (fresh and dried), the carrots and the garlic clove.
  • Heat the olive oil in a saucepan.
  • Fry the chopped vegetables for 4 minutes except the garlic, which we add at the end and stir for 1 minute.
  • Add the beans and stir.
  • Add the tomato juice, spices and 250ml hot water.
  • Close the lid, reduce the temperature of the stove top to a medium level and leave them for 20 minutes.

For the bulgur:

  • Heat the olive oil in a saucepan.
  • Add the oatmeal and mix.
  • Pour 250ml of water and close the lid.
  • Lower the temperature of the stove top below the medium level and wait 8-10 minutes.
  • When they are both ready, either mix them or serve the bulgur and the beans with the sauce on top.
  • Enjoy!

Notes

Extra Tip: We can replace the water in the bulgur with vegetable broth.
