I think that the fact that I am a spaghetti lover is well known! How so, you ask? Go and take a look at my Instagram profile… If there is not once – let’s say now – spaghetti in my week, things go wrong. I mean it! I love pasta in all forms and with all sauces, as they give me completely different flavors and combinations. It is a favorite material with which I often experiment either to enjoy them in my daily life or to include them on a table in various forms such as my favorite pasticcio or cannelloni.

Today I had a really full day and my time was limited. However, the week was over and I had not yet eaten my favorite food. So, I decided to do something about it! I prepared an easy, fast and delicious recipe for pasta with ingredients that you definitely have in your kitchen. A little magic comes from the vegetables and a few aromas from herbs and this dish gets, without any doubt, among my first choices. Of course, the vegetable parmesan also gives its own touch to the dish and gives it a very unique character.

Ingredients
  

  • 500 g farfalle
  • 2 red peppers
  • 2 green peppers
  • 1 big onion
  • 400 g tomato juice
  • 1 shot red wine
  • 4 tbsp. olive oil
  • 2 1/2 tbsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1 pinch of freshly ground pepper
  • 1 pinch of sugar

Instructions
 

  • We add 1 tbsp. salt and the spaghetti in 2 liters of boiling water. We let them boil for 10 minutes.
  • We cut the peppers into thin strips after removing the seeds.
  • We finely chop the onion.
  • We add the olive oil in a saucepan. Once it is heated, we add the peppers and the onion and fry them for about 5 minutes over medium heat.
  • Then we add 1 clove of garlic, stir and wait for 1 minute.
  • We poach them in red wine.
  • We add the tomato juice and 250ml water, as well as 1 1/2 tbsp. salt, garlic powder, paprika, pepper and sugar.
  • We mix and let them set for 20 minutes.
  • We serve with grated cheese and mint.
  • Enjoy your meal!
