Do you celebrate Halloween?
Halloween is a time of the year that I like a lot! When I was living in Greece, I never celebrated it, as it isn’t a very popular feast there. But this year, since I’ve moved to Paris, I want to celebrate it. The city is decorated with lights, and you can see edible or decorative pumpkins everywhere. The spirit of Halloween affected me, too, so I decided to make one or more recipes with pumpkins so that we could all celebrate together and enjoy many pumpkin delicacies. Are you ready?
Pumpkin Muffins with Chocolate Drops
So, one day I went to the supermarket, bought some pumpkins, and returned home. I left them on the kitchen counter and started looking at them. I kept looking and thinking about what recipe to make… My main issue was that I didn’t know if I wanted to make a sweet or a savory recipe. And this is an essential base before you start cooking, haha. Finally, I decided I wanted something sweet to accompany my morning coffee, but I have more pumpkin surprises for you soon. So, I made these lovely muffins that you can make either for breakfast, or as a snack for the kids.
Dreamy Pumpkin Muffins
Ingredients
- 210 g all-purpose flour
- 200 g pumpkin puree (either canned or homemade)
- 180 g brown sugar
- 150 ml coconut milk
- 3 tbsp. coconut oil
- 100 g black chocolate drops
- 1 tsp. cinnamon
- ⅓ tsp. nutmeg powder
- 1 tsp. Bourbon vanilla extract
- 1 tsp. baking soda
- 1 pinch of salt
- pumpkin seeds (for decoration)
Instructions
- Preheat the oven to 165°C.
- Mix the flour, cinnamon, nutmeg, baking soda and salt in a bowl.
- Add the pumpkin puree, coconut milk, sugar, coconut oil, black chocolate drops, and vanilla in a bowl and mix them well.
- Then, add the mixture from the second bowl to the first and mix well.
- Fill the muffin tins with our mixture using a spoon.
- Decorate each muffin with pumpkin seeds.
- Bake them for about 25 minutes.
- Let the muffins cool for 30 minutes and then serve.
