Cookies that remind us of our childhood
It has been a while since I wanted to make this recipe. I generally like to reminisce recipes of my childhood years and take a journey back to the past and the carefree moments of that period of my life. Cooking, with its aromas and flavors, helps me do exactly that, and it’s one of the reasons I love being in the kitchen and cooking so much. Today’s recipe, therefore, has a “mom’s” aroma since I think that most mothers used to shape and bake cookies just like these. The house was full of aromas, and we were all looking forward to eating them when they came out of the oven. Do you have these memories too?
Our beloved cookies!
When I was making this recipe and choosing the ingredients, the most important thing was that I wanted the ingredients to be simple and for everyone to be able to find them at the nearest supermarket. To be precise, I imagined a child asking his parents in a loving and pressing way for cookies on a Saturday morning. So, they opened the cupboards and immediately started preparing them. Based on this, I chose all the ingredients, and I truly think that they exist in every house. I hope you and your little kid will love them very much, and I hope that you will live this image I had in my mind, if you want it.
Crisp Vanilla Cookies
Ingredients
- 250 gr all-purpose flour
- 125 gr vegan butter
- 120 gr granulated sugar
- 60 ml almond milk
- 2 tbsp. vanilla Bourbon
- ½ tsp. baking powder
- 1 pinch of salt
- powdered sugar (for decoration)
Instructions
- Melt the butter and set it aside until it cools.
- Add the all-purpose flour, cornflour, baking powder, and salt to a bowl and mix well.
- Add the sugar, milk, butter (after it has cooled), and vanilla to another bowl and mix well too.
- Add the mixture from the second bowl to the first and mix everything well.
- Then, spread a piece of parchment paper on a baking tray.
- Form small balls of 25g each and place them in the tray.
- Bake them at 180 °C for 20 minutes.
- Remove the tray from the oven and wait at least 15 minutes for the cookies to cool.
- Add powdered sugar on top and enjoy!
