What happens when Helen makes desserts?
Although my favorite dessert is cheesecake (it’s a big story that will come with its recipe), I generally love sweets and especially chocolate ones. As for the chocolate, there’s not much I can say rather than it’s unusual to leave even one bite. Generally, when I cook my kitchen gets really messy, as I use almost all the kitchenware and I end up washing dishes for hours. But when I make a dessert, there is not such an issue, since I clear every little bite left from the bowls. So, today I decided to show you a super sweet recipe to make for your partner and make him go crazy! It is also ideal for children, as they can help in the preparation, but also they can choose their favorite designs for the muffins.
How was the muffins’ recipe created?
This recipe started about a month ago, when I wanted to make something new, sweet and of course with chocolate for Valentine’s Day. Although, generally, I am not in favor of commercial holidays, because I believe that we should show our love and devotion every day. However, I do like to celebrate (basically to eat sweets! No comments required!). So, I decided to avoid heart shaped cakes. I thought of something like brownie, but I had already made it several times in the past (See here the perfect recipe for Chocolate Brownie), so my next thought was muffins. Are you ready?
Chocolate Muffins
Ingredients
- 180 g all-purpose flour
- 240 ml rice milk
- 150 g coconut sugar
- 50 g cocoa
- 3 tbsp. coconut oil
- 2 tbsp. apple vinegar
- 1 tsp. baking soda
- 1 tsp. vanilla bourbon
- 200 g chocolate chips
Extra Ingredients:
- vegan chantilly (optionally)
- vegan chocolate wafer rolls (optionally)
Instructions
- Add the flour, coconut sugar, cocoa, baking soda, vanilla and salt in a bowl and mix well.
- Melt the coconut oil in a saucepan and then let it cool for 5 minutes.
- Add the milk, the coconut oil, apple cider vinegar and 150g from the chocolate chips into the bowl and mix very well.
- Distribute the mixture evenly over the pastry molds.
- Top with the remaining chocolate chips.
- Bake in the oven at 180 °C for 20-25 minutes.
- Optionally, serve with whipped cream and chocolate chips to make the temptation even greater.
