10 Recipes of mine in the Greek Vegan Magazine

My joy is indescribable, as the new Greek Vegan Magazine hosts 10 unique, autumn recipes, as well as an interview of mine. My goal was to create simple -mostly- and very tasty recipes with seasonal fruits and vegetables, so that the ingredients can be found easily and quickly in the nearest supermarket. Regarding the interview, Maria Georgiadou, who I want to say that she is an exceptional and kind person, was the one I talked with and she made me feel very comfortable and I spoke about my great passion -cooking-, the reasons that I was led to follow the vegan lifestyle and of course, what I dream for my future. In the same Greek Vegan Magazine, you can also find many interviews, articles, newsletters, recipes and a wide range of topics for those who are vegan or want to follow the vegan lifestyle or even if they are just interested in learning about what is happening and try new, delicious recipes. My 10 recipes in the Greek Vegan Magazine

1. Velvety Leek Soup

This soup is ideal for both appetizer and main course, as it is very filling and nutritious. It can also be a really good choice for our dinner and will be loved by young and old for sure!

2. Crispy and Spicy Cauliflower Bites

This recipe is made for both cauliflower lovers and its “mortal enemies” too, since the first ones will love it, while the second ones will completely change their mind about it. Also, since the bites are a little spicy, they are an ideal choice for those who love these flavors. These bites can be combined perfectly with cool yogurt sauce to complete the meal in the best way!

3. Grilled Sweet Potatoes with Brussel Sprouts

You can integrate this recipe very nicely and easily in the festive table of Christmas and or New Year’s Eve, as it has wonderful colors, which are harmonized perfectly with the colors of the holidays. It is also easy to prepare, tasty and nutritious.

4. Pumpkin Sauce Penne

Was there a possibility for me not to make at least one recipe with pasta? Of course not! So, I have prepared a special recipe for pasta with pumpkin sauce. Pumpkin gives a wonderful taste to our recipe and makes it different from the classic pasta recipes.

5. Chickpea Coconut Curry

This dish has Oriental aromas and can travel us to distant countries with its flavors and aromas. It is a recipe ideal for cold days, since it has many spices, which can warm us up, while they have a wonderful taste and of course a lot of protein. Chickpeas, guys, eat chickpeas!

6. Stuffed Yellow Pumpkin

This recipe is absolutely festive, as the colors “decorate” this dish beautifully, while the pumpkin -by itself- is considered as a very beautiful ingredient, which we can use both in formal, festive moments and in our daily menu too. In addition, this particular recipe, due to the ingredients it contains, it is highly nutritious and it would be ideal for us to include many of its ingredients in our diet.

7. Broccoli Casserole with “Cheesy” Sauce

This is one of my favorite recipes. The truth is that broccoli isn’t one of my favorite vegetables, but combined with a delicious “cheesy” sauce makes it really hard to resist. Whether you are a friend of broccoli or not, you should definitely try this casserole!

8. Pumpkin Muffins with Chocolate Drops

And now it’s time for sweet recipes! The pumpkin is a favourite ingredient, since once again it is in a recipe of mine. Who wouldn’t enjoy his hot, morning coffee with one -or more- pumpkin muffin? Of course, the recipe has chocolate too, which makes the result irresistible!

9. Fluffy Banana Bread with Walnuts

Simple, quick and delicious! You can enjoy banana bread in your breakfast, with your coffee, in the office, but also as a children’s snack for school. It is a very popular recipe, which can be combined with any moment of the day and wherever you might be.

10. Grilled Cinnamon Pears

Another easy, quick and low calorie recipe, since it is based on pears. This recipe can “save” us in cases where someone comes uninvited or we haven’t had time to prepare a dessert. It is a recipe that can be ready in a few minutes and in my opinion can also be very impressive. Moreover, it is a healthy dessert choice for both you and the children.
