What do you usually eat in summer?
Personally, I love salads! Summer is the season when fruits and vegetables are at the top of my grocery list and of course the abundance of fruits and vegetables in Greece gives me the opportunity to experiment and create new, amazing flavors. Today’s recipe is exactly like this, while its main characteristics are the delicious taste and the light and cool flavors, that makes it ideal for high temperature days.
How important is quinoa for our diet?
Honestly, when I first tried quinoa, I didn’t like it at all! Maybe it was because I hadn’t tried it before or maybe I just hadn’t added the right spices that would make it amazing according to my tastes. At the same time, I heard a lot of positive comments and information about its nutritional value and so I decided to find out more about it. Learning that quinoa is rich in protein and vitamins, made me decide that I should definitely include it in my diet! So, I started making different recipes and quinoa became one of my favorite meals!
The Ultimate Summer Quinoa Salad
Ingredients
For the Salad:
- 100 g tricolor quinoa
- 100 g corn (boiled or canned)
- 20 cherry tomatoes
- 2 cucumbers
- 2 green peppers
- 2 carrots
- 2 tbsp coconut oil
- 1 tsp salt
- ½ tsp garlic powder
- 1 pinch of freshly ground pepper
- 1 vegetable cube
For the Sauce:
- 3 tbsp maple syrup
- 1 tbsp apple cider vinegar
- juice of 2 limes
- 1/2 tsp salt
Instructions
For the Salad:
- Wash the cherry tomatoes, peppers and cucumbers and then chop them.
- Wash, peel and chop the carrots.
- Put the quinoa in a colander and rinse it well with warm running water for 5 minutes.
- Heat the coconut oil in a saucepan.
- Once it has melted, add the quinoa and we stir for 1 minute.
- Add 300ml hot water, as well as the salt, pepper, garlic powder and the vegetable cube in the saucepan.
- Close the saucepan with its lid, reduce the heat to medium and cook for 20 minutes, until the quinoa swells and has a fluffy effect.
For the Sauce:
- Mix the maple syrup, lime juice, apple cider vinegar and salt.
- Stir and pour the sauce over the salad.
- Serve and enjoy!
