2022’s First Recipe!

I am very happy for the new year and I really wish it will be a year full of health and enlightenment for everyone! And this is the right time, I think, that I want to personally thank you for supporting and loving “When Helen Cooks” in 2021. It was the first year that my blog went online and I had a lot of fear, since I put in extra effort and much love. It was a multi-month journey, in which I tried, stressed and happy, but mostly proud of managing from scratch, without any knowledge of web developing and managing websites to produce this result. I promise 2022 will be a very creative and tasty year, since I have already prepared some recipes that will be published soon and I can guarantee you that we will take cooking to another level. So, Happy New Year!

Arugula Salad

In general, most of us eat a little more during the holidays or maybe a little more unhealthy. Em, there are all these traditional Greek desserts, such as kourabiedes (Greek Almond Cookies) and melomakarona (Greek Honey Cookies), so we ate a lot of them. Every year, as soon as the Christmas holidays are over, I always look for ideas for low-fat, but at the same time filling meals. This salad is a favorite of mine, as I generally love arugula. I tried it for the first time at the Christmas holidays at the festive menu and it made everyone excited, even those who don’t like arugula. Its combination with the maple syrup, the sauce’s basic ingredient, makes a wonderful result, as it softens the bitter taste that the arugula often has. At the same time, the green apple gives its own touch, while the raisins and the pecans give us all their nutrients.

Arugula Salad with Apple, Pecans and Raisins

Arugula is a very popular salad, especially during the winter months. This combination with pecans and raisins enhances its taste and its nutritional value, while at the same time making it very fulfilling. It can be served as an appetizer, but also as a main meal, especially in circumstances when we have many things to do and not much time available.

Ingredients
  

For the salad:

  • 100 gr arugula
  • 1 green apple
  • 50 gr raw pecans
  • 40 gr raisins
  • 30 gr croutons

For the sauce:

  • 3 tbsp. olive oil
  • 2 tbsp. maple syrup
  • ½ tsp. salt
  • 1 pinch of freshly ground pepper
  • juice of ½ lime

Instructions
 

  • Add the arugula, pecans, raisins, and croutons in a salad bowl.
  • Wash and slice the apple.
  • Add the ingredients for the sauce in a bowl and mix them well.
  • Pour the sauce into the salad and enjoy it!

Notes

Extra Tip: You can also add dried red berries to enhance the salad’s taste and nutritional value.
