Can we veganize gyros?

Yes, of course this is possible! Do you think that vegans eat only lettuce? Yes, yes I know… This is a very popular issue that we have discussed it again in the past, but there is always a brand new, unique and delicious recipe to prove to us once again that this isn’t true. A few months ago, I had made a super delicious mushroom gyros, that you should definitely try, if you haven’t already had. Today gyros is on the menu once again, but in a little different recipe, as today we are making soy gyros. The recipe is very easy and it is one of my favorite, as I can easily find the ingredients and enjoy my homemade gyros whenever I want. I have made this recipe many times in the past, as I usually cook this gyros when I have guests, either in a mix grill plate, where I also add other meat substitutes, such as burgers, sausages and tofu, or in the so-called “pita bread with gyros”!

Which is the origin of soya?

This is a question I have heard and I have answered many times. This is a very important issue that concerns many people. Soy or soy bean is a legume and comes from Asian countries. It exists and is used in many forms, such as tofu, soy milk, soy sauce, soy flour, soybean oil, etc. Also, I have to mention that soy is a basic source of plant-based protein, while at the same time it contributes to gut health. Soy beans contain plant compounds that can help prevent breast and prostate cancer.

Delicious Vegan Soy Gyros

Ingredients
  

  • 250 g dry soy fillets
  • 3 tbsp. olive oil
  • 1 tbsp. bbq sauce
  • 1 tbsp. salt
  • 1 tbsp. oregano
  • 1 tbsp. smoked paprika
  • 1 tsp. dijon mustard
  • 1 tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. dried thyme
  • ½ tsp. "mpaxes" (greek mix of spices)
  • 1 pinch of freshly ground pepper
  • sunflower oil (for frying)

Instructions
 

  • Add the fillets in 1.5L of boiling water and let them boil for 10-12 minutes until they get soft.
  • Drain the fillets in a colander and remove as much of the water they have sucked as possible by applying pressure on them.
  • Cut the fillets into thin, vertical strips.
  • Add in a large bowl the chopped fillets and all the other ingredients and mix well.
  • Leave the marinated fillets aside for at least 1 hour.
  • Add the sunflower oil in a pan and fry the chopped fillets for 8-10 minutes.
  • Spread kitchen paper on a plate and add gyros, as soon as it comes out of the pan to remove the excess oil.
  • Serve gyros while it is hot accompanied by tzatziki.
  • Enjoy!

Extra Tip: Combine the soy gyros with the most delicious vegan tzatziki.
