Delicious Vegan Soy Gyros

- 250 g dry soy fillets
- 3 tbsp. olive oil
- 1 tbsp. bbq sauce
- 1 tbsp. salt
- 1 tbsp. oregano
- 1 tbsp. smoked paprika
- 1 tsp. dijon mustard
- 1 tsp. onion powder
- ½ tsp. garlic powder
- ½ tsp. dried thyme
- ½ tsp. "mpaxes" (greek mix of spices)
- 1 pinch of freshly ground pepper
- sunflower oil (for frying)
Add the fillets in 1.5L of boiling water and let them boil for 10-12 minutes until they get soft.
Drain the fillets in a colander and remove as much of the water they have sucked as possible by applying pressure on them.
Cut the fillets into thin, vertical strips.
Add in a large bowl the chopped fillets and all the other ingredients and mix well.
Leave the marinated fillets aside for at least 1 hour.
Add the sunflower oil in a pan and fry the chopped fillets for 8-10 minutes.
Spread kitchen paper on a plate and add gyros, as soon as it comes out of the pan to remove the excess oil.
Serve gyros while it is hot accompanied by tzatziki.
