Carrot: One of the best vegetables for our health!

Carrots, in addition to being delicious, are also very healthy. The truth is that I have always loved them very much and I used to eat them raw. But other than that, we shouldn’t forget how useful they can be for our health. More specifically, carrot is rich in beta carotene, which our body converts into vitamin A, fiber, vitamin K1, potassium and antioxidants. Carrot consumption is associated with improved vision, lower cholesterol, and reduced risk of cancer. Carrots are also very friendly to those who want to lose weight.

The truth is that this recipe was an idea that came up to me out of the blue. Specifically, a few days ago I was looking at the vegetable shelf I have in the fridge and I had a large amount of carrots. In general, I use carrots a lot in cooking, as I really like them in soups, sauces, etc. So, the other day I decided to make a recipe exclusively with this delicious vegetable. Wanting to get away from various classic recipes, I thought of turning them into something sweet. Starting to make the jam, I didn’t know if I would really like it, as I had never tried carrot jam. When it was ready and I decided to try it, I finally realized that it was very, very good. And at this moment I felt proud of myself… Haha!

Ingredients
  

  • 1 k carrots
  • 300 gr brown sugar
  • 2 tsp. bourbon vanlla
  • 2 cinnamon sticks
  • juice of 2 oranges
  • juice of 2 limes
  • zest of a lime

Instructions
 

  • Peel the carrots and grate them .
  • Add 2 liters of water and the grated carrots in a saucepan.
  • Let them boil for 15 minutes.
  • Then, drain the carrots in a colander.
  • Add the carrots to a blender and beat for 1 minute to make a purée.
  • Add the purée, the sugar, vanilla, cinnamon sticks, orange juice, lime juice, lime zest and 300ml water in a saucepan.
  • Boil on medium heat for 20 minutes.
  • Let the jam to get cool and place it in the fridge for 2 houfrs.
  • Enjoy!
