Carrot Marmalade

- 1 k carrots
- 300 gr brown sugar
- 2 tsp. bourbon vanlla
- 2 cinnamon sticks
- juice of 2 oranges
- juice of 2 limes
- zest of a lime
Peel the carrots and grate them .
Add 2 liters of water and the grated carrots in a saucepan.
Let them boil for 15 minutes.
Then, drain the carrots in a colander.
Add the carrots to a blender and beat for 1 minute to make a purée.
Add the purée, the sugar, vanilla, cinnamon sticks, orange juice, lime juice, lime zest and 300ml water in a saucepan.
Boil on medium heat for 20 minutes.
Let the jam to get cool and place it in the fridge for 2 houfrs.
