Do you love or hate broccoli?

So, which team are you in? On the one that loves it or on the one that hates it and they don’t even want to hear about it? In general, broccoli is a very misunderstood vegetable -I would say- in my opinion. Many people may judge it by its not so nice smell when we boil it, something that affected me a lot when I was a child. More specifically, I typically remember my mum trying a lot of different things to persuade me to try it, but I resisted no matter what. Haha, now that I eat it and I like it, my reactions when I was a child seem so funny to me. As I have said a lot of times, there is alway a way to change our mind for all the foods we don’t particularly like. And that way is to try them in different recipes! Trying a fruit, vegetable or legume for example on various recipes, will make sure that we will find one -or many- recipes that we will actually love. The same goes for broccoli too! If you love it, you should definitely try this recipe. If not, I suggest you cook this soup and I’m sure you will change your mind.

Broccoli: Nutritional Proporties

Broccoli is a vegetable that can contribute greatly to our health. In particular, it is a rich source of fiber, vitamin C, vitamin K, iron and potassium. At the same time, it provides a significant amount of protein, having very few calories at the same time. Broccoli has the potential to help reducing the risk of cancer and heart diseases as well as help lower cholesterol. Its antioxidant and fiber content can lower blood sugar and improve diabetic control. Haven’t you already started trying more broccoli recipes? Velvety Broccoli Soup

A hot soup is the ideal meal for cold days in autumn and winter. Enjoy all the nutrients of broccoli in combination with the velvety texture of the soup.

Ingredients
  

  • 1 big broccoli
  • 2 potatoes
  • 1 carrot
  • 1 yellow onion
  • 1 clove of garlic
  • juice from 1 lime
  • 500 ml soy milk (without sugar)
  • 4 tbsp. olive oil
  • 1 tbsp. salt
  • 1 pinch of freshly ground pepper
  • 1 tsp. dried thyme
  • 1/2 tsp. onion powder
  • 1/3 tsp. garlic powder
  • 1/2 concentrated mustard
  • 1 vegetable cube

Instructions
 

  • Peel and chop the broccoli, potatoes and carrot.
  • Add the broccoli, potatoes and carrot in boiling water and cook them for 20 minutes.
  • Then, drain them in a colander.
  • Peel and finely chop the onion and garlic clove.
  • Add the olive oil in a pot and fry the onion for 2-3 minutes.
  • Add the garlic and fry for another minute.
  • Put the boiled broccoli, potatoes and carrot in the pot.
  • Continue by adding soy milk and 350ml hot water, as well as the salt, pepper, dried thyme, onion powder, garlic powder, mustard and vegetable cube.
  • Stir and let them set for 20 minutes.
  • Once it is ready, add the lime juice and stir again.
  • Transfer the soup to a blender and beat for 2-3 minutes, until it acquires a velvety texture.
  • Serve while it is hot adding fresh thyme and enjoy!
