Peel and chop the broccoli, potatoes and carrot.
Add the broccoli, potatoes and carrot in boiling water and cook them for 20 minutes.
Then, drain them in a colander.
Peel and finely chop the onion and garlic clove.
Add the olive oil in a pot and fry the onion for 2-3 minutes.
Add the garlic and fry for another minute.
Put the boiled broccoli, potatoes and carrot in the pot.
Continue by adding soy milk and 350ml hot water, as well as the salt, pepper, dried thyme, onion powder, garlic powder, mustard and vegetable cube.
Stir and let them set for 20 minutes.
Once it is ready, add the lime juice and stir again.
Transfer the soup to a blender and beat for 2-3 minutes, until it acquires a velvety texture.
Serve while it is hot adding fresh thyme and enjoy!
