What is Batzina?
Batzina is the traditional dough pie that originates from Thessaly, Greece. Karditsa makes us feel so excited with this pie, which, initially, was considered an easy, low-budget and filling meal for people who had been working hard in the fields during the summer months. Over time, this pie was loved by the new generations too and continued to exist and made known by the parents who made it for their children. This pie is ideal no matter the meal of the day, as it is very filling. Personally, I enjoy it mainly in the morning with my plant milk or my favorite smoothie.
How do I know this pie?
This recipe reminds me many of my childhood memories, since my mother used to make this pie that I loved very much, especially when it was summer and zucchini was a seasonal vegetable. More specifically, I won’t forget the summers in Halkidiki, Greece, where I enjoyed the sea, the games with my friends and this pie. But what about the vegan version? It is the same delicious and easy recipe. The ingredients are very easy to find and it is low-budget too. Are you ready?
Greek Zucchini Pie (Batzina)
Ingredients
- 1 k zucchini
- 3 green onions
- 300 g flour for all uses
- 400 g soy yogurt
- 2 tbsp. vegan butter
- 2 tbsp. nutritional yeast
- 1 tbsp. Himalayan salt
- 1 tbsp. garlic powder
- 1 tbsp. basil powder
- 1 tsp. baking powder
- 1 pinch of freshly ground pepper
- 1/2 bunch of dill
- sesame (as much as you want)
Instructions
- Wash the zucchini and remove the edges.
- Grate zucchini and drain them very well with your hands to remove all their liquids.
- Chop finely the green onions and the dill.
- Mix the flour, baking powder, salt, garlic powder, basil and pepper in a bowl.
- Heat the butter and melt it. Set it aside for a few minutes, until it gets cool.
- Put the yogurt and the melted butter in another bowl and mix them well.
- Add the zucchini, green onions and dill in the bowl with the flour and mix them well.
- Then, in the same bowl, put the mixture with the yogurt and butter and mix well, creating a united mixture.
- Spread a piece of parchment paper in a baking pan and add the mixture.
- Spread the mixture very well in the pan to create a thin layer of dough.
- Sprinkle the pie on top with sesame seeds.
- Bake for 45-50 minutes at 180°C.
- Serve and enjoy!
