Greek Zucchini Pie (Batzina)

Let's "travel" to Karditsa in Greece through this delicious pie. Greek Zucchini Pie is here to excite the youngest and the oldest!

Ingredients
  

  • 1 k zucchini
  • 3 green onions
  • 300 g flour for all uses
  • 400 g soy yogurt
  • 2 tbsp. vegan butter
  • 2 tbsp. nutritional yeast
  • 1 tbsp. Himalayan salt
  • 1 tbsp. garlic powder
  • 1 tbsp. basil powder
  • 1 tsp. baking powder
  • 1 pinch of freshly ground pepper
  • 1/2 bunch of dill
  • sesame (as much as you want)

Instructions
 

  • Wash the zucchini and remove the edges.
  • Grate zucchini and drain them very well with your hands to remove all their liquids.
  • Chop finely the green onions and the dill.
  • Mix the flour, baking powder, salt, garlic powder, basil and pepper in a bowl.
  • Heat the butter and melt it. Set it aside for a few minutes, until it gets cool.
  • Put the yogurt and the melted butter in another bowl and mix them well.
  • Add the zucchini, green onions and dill in the bowl with the flour and mix them well.
  • Then, in the same bowl, put the mixture with the yogurt and butter and mix well, creating a united mixture.
  • Spread a piece of parchment paper in a baking pan and add the mixture.
  • Spread the mixture very well in the pan to create a thin layer of dough.
  • Sprinkle the pie on top with sesame seeds.
  • Bake for 45-50 minutes at 180°C.
  • Serve and enjoy!

Notes

Extra Tip: Combine Batzina with the cool Yogurt Sauce for an amazing result!
