I think that the fact that I am a spaghetti lover is well known. How so, you ask? Go and take a look at my Instagram profile! If there is not at least once spaghetti meal per week, things go wrong. I love pasta in all forms and with all sauces, as they give me completely different flavors and combinations. It’s a favorite material which I often enjoy it in my daily life or I include it in the menu in a special occasion in various forms such as my favorite pasticcio or cannelloni.

Today I had a really full day and my time was limited. However, the week was over and I hadn’t eaten my favorite food yet. So, I decided to do something about it. I prepared an easy, fast and delicious recipe for pasta with ingredients that you definitely have in your kitchen. A little magic comes from the vegetables and a few aromas from the herbs and the dish gets, without any doubt, among my first choices. Of course, the vegen parmesan also gives its own touch to the dish and gives it a very unique character.

Ingredients
  

  • 500 g farfalle pasta
  • 2 red peppers
  • 2 green peppers
  • 1 big onion
  • 400 g tomato juice
  • 1 shot red wine
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 pinch of freshly ground pepper
  • 1 pinch of sugar
  • vegan parmesan

Instructions
 

  • Boil the pasta according to the package instructions.
  • Chop finely the onion.
  • Cut the peppers into thin strips after removing the seeds.
  • Add the olive oil in a saucepan. Once it is hot, add the onion and the peppers and fry them for about 5 minutes over medium heat.
  • Then, chop the garlic, add it in the pan, stir and wait for 1 minute.
  • Quench with the red wine.
  • Add the tomato juice and 250ml of the boiling pasta water, as well as the salt, garlic powder, paprika, oregano, pepper, and sugar.
  • Mix and let them set for 20 minutes.
  • Serve with grated vegan parmesan and fresh mint.
