Farfalle Pasta with Red Sauce

- 500 g farfalle pasta
- 2 red peppers
- 2 green peppers
- 1 big onion
- 400 g tomato juice
- 1 shot red wine
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 pinch of freshly ground pepper
- 1 pinch of sugar
- vegan parmesan
Boil the pasta according to the package instructions.
Chop finely the onion.
Cut the peppers into thin strips after removing the seeds.
Add the olive oil in a saucepan. Once it is hot, add the onion and the peppers and fry them for about 5 minutes over medium heat.
Then, chop the garlic, add it in the pan, stir and wait for 1 minute.
Quench with the red wine.
Add the tomato juice and 250ml of the boiling pasta water, as well as the salt, garlic powder, paprika, oregano, pepper, and sugar.
Mix and let them set for 20 minutes.
Serve with grated vegan parmesan and fresh mint.
