An appetizer for every taste!
Is there anyone here that didn’t order croquettes the last time he was on a Greek tavern? Most of us love this appetizer, because it’s a great wine or beer pairing! The savory taste that characterizes the fried croquettes (we aren’t speaking about calories now!) is ideal to win everyone’s hearts. So, I never say no to croquettes too. And when I refer to croquettes, I mean all kinds: cheese croquettes, potato croquettes, eggplant croquettes… Let me stop right here, because I am ready to go to the kitchen and start cooking again!
Kids and croquettes!
I think this is one of the oldest relationships… Judging from my nephew, who eats two of them in a single bite, croquettes are surely popular especially in children. Of course, it was the same for me too. When I was little, I didn’t let anyone touch them, but me! These croquettes are completely vegan and they are based on raw nuts and specifically cashews, which makes them healthier compared to the classic ones that are being sold in markets. As for the process of making croquettes, I have to say that it is a lot of fun, as it also requires the creation of small balls, something that all our little friends will love. Ready to cook?
Crunchy, Savory Fried Croquettes
Ingredients
For the croquettes:
- 150 g raw cashews
- 1 clove of garlic
- juice of 1/2 lemon
- 4 tbsp tapioka starch
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1 pinch of freshly grounded pepper
For the breading:
- 150 ml soy milk
- 75 g dried breadcrumbs
- 120 g all-purpose flour
Extra materials:
- sunflower oil
Instructions
- Soak the cashews in water for 8 hours.
- In a blender, add the cashews, after drained them, the garlic clove, tapioca starch, lemon juice, nutritional yeast, salt, garlic powder, onion powder, basil and pepper. Beat them for 2 minutes.
- Then, get 3 plates and put the flour in the first one, the milk in the second one and the breadcrumbs in the third one.
- Form with our hands balls with the dough made in the blender.
- Dip the balls first in the flour, then in the milk and finally in the breadcrumbs.
- Fry each croquette in hot sunflower oil for about 1 minute and always pay attention, because it can easily get burnt.
- Serve and enjoy!
