Crunchy, Savory Fried Croquettes

For the croquettes:
- 150 g raw cashews
- 1 clove of garlic
- juice of 1/2 lemon
- 4 tbsp tapioka starch
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1 pinch of freshly grounded pepper
For the breading:
- 150 ml soy milk
- 75 g dried breadcrumbs
- 120 g all-purpose flour
Soak the cashews in water for 8 hours.
In a blender, add the cashews, after drained them, the garlic clove, tapioca starch, lemon juice, nutritional yeast, salt, garlic powder, onion powder, basil and pepper. Beat them for 2 minutes.
Then, get 3 plates and put the flour in the first one, the milk in the second one and the breadcrumbs in the third one.
Form with our hands balls with the dough made in the blender.
Dip the balls first in the flour, then in the milk and finally in the breadcrumbs.
Fry each croquette in hot sunflower oil for about 1 minute and always pay attention, because it can easily get burnt.
