Do you love salads?
I’m the kind of person that i wasn’t used to eat salads often in the past… And, of course, when that happened, we were talking about a lettuce leaf in a sandwich or half a tomato in a salad full of olive oil. But as time passed, that has changed, since my cooking passion showed me how to make “real” salads with rich ingredients that provide me with energy, taste and of course all the necessary elements that my body needs. It is from every aspect a complete meal!
Lentil Salad: Favorite choice!
This salad was created while I was searching for a quick, tasty and nutritious recipe that could keep me strong all day until I got home after a lot of work and obligations. I had in mind that I wanted something cool as well, which refers to summer, Mediterranean moments in my opinion… And here it is! I present to you the top lentil salad that you should definitely try! You can either choose to accompany your menu with it or have it as your main dish and believe me, you will love it!
Fresh Lentil Salad
Ingredients
- 200 g brown lentils
- 200 g red lentil
- 1 big cucumber
- 1 big onion
- 10 cherry tomatoes
- 1/2 bunch of parsley
- 2 tbsp. olive oil
- 1 tbsp. Dijon mustard
- 1 tsp. salt
- 1 pinch of freshly ground pepper
- juice of 2 limes
Instructions
- Put the lentils in 1L of boiling water. When they are ready, strain them in a colander.
- Chop finely the cucumber, onion, parsley and cherry tomatoes.
- Add them to a salad bowl along with the lentils.
- Mix the mustard, olive oil, salt, pepper and lime juice in a small bowl until it gets smooth.
- Pour the sauce over the salad and mix well so that it goes everywhere.
- Enjoy!
