Baked Vegan Soy Patties

Ingredients
  

  • 200 g soy mince
  • 3 slices of bread (3x30g)
  • 1 onion
  • 2 cloves of garlic
  • 5 tbsp. corn flour
  • 1 tbsp. tomato paste
  • 2 tbsp. bbq sauce
  • 4 tbsp. olive oil
  • 1 tbsp. Himalayan salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1 tsp. oregano
  • 1 tsp. dried basil
  • 1 pinch of freshly ground pepper
  • parsley (as much as we want)

Instructions
 

  • Put the bread slices in a bowl and we soak them in water. Wait for 10 minutes.
  • At the same time, add the soy mince in 2L of boiling water and let it swell for 10 minutes.
  • Drain the soy mince in a colander and we make sure that as much liquid as possible is removed. Also, use your hands to squeeze it.
  • Follow the same procedure for the bread in order to remove all the liquids.
  • Peel and finely chop the onion, the garlic and the parsley.
  • Then, add the onion, garlic, parsley, soy mince, bread, flour, tomato paste, bbq sauce, olive oil and spices to a large bowl and we mix them well with your hands until evenly distributed.
  • Add a piece of parchment paper in a pan and start to form medium-sized patties. Make sure that the patties do not touch each other.
  • Bake for 40 minutes at 180 ° C, while turning them on both sides after the first 20 minutes.
  • Serve and enjoy!

Notes

Extra Tip 1: If you want to grate the onion in the grater, you must be very careful to remove the liquids that will come out, because we want as little liquids as possible, so our patties won't break up.
Extra Tip 2: Combine your patties with the most delicious vegan tzatziki or choose the power of chickpeas by making the ultimate hummus!
