Roasted Brussels Sprouts and Sweet Potatoes

This salad is an ideal choice for a meal, festive or not. It is very filling and nutritious, which makes it suitable even as a main meal. Pomegranate and orange are unique additions that make it irresistible!

- 3 sweet potatoes
- 500 g brussels sprouts
- 1 pomegranate's seeds
- 2 cloves of garlic
- 1 orange's juice
- 2 tbsp. olive oil
- 3 tbsp. balsamic
- 1 tbsp. salt
- 1 pinch of freshly ground pepper
- ½ tbsp. smoked paprika
Preheat the oven to 180°C.
Peel and slice the sweet potatoes, Brussels sprouts, and garlic cloves.
Spread a piece of parchment paper in a pan and add the sweet potatoes, Brussels sprouts and garlic cloves.
Add olive oil, salt, pepper and paprika.
Bake them for 30 minutes.
Once they are ready, remove the pan from the oven and add the pomegranate seeds.
Mix the orange juice and the balsamic in a bowl.
Serve by pouring the mixture over the vegetables.
