Roasted Brussels Sprouts and Sweet Potatoes

This salad is an ideal choice for a meal, festive or not. It is very filling and nutritious, which makes it suitable even as a main meal. Pomegranate and orange are unique additions that make it irresistible!

Ingredients
  

  • 3 sweet potatoes
  • 500 g brussels sprouts
  • 1 pomegranate's seeds
  • 2 cloves of garlic
  • 1 orange's juice
  • 2 tbsp. olive oil
  • 3 tbsp. balsamic
  • 1 tbsp. salt
  • 1 pinch of freshly ground pepper
  • ½ tbsp. smoked paprika

Instructions
 

  • Preheat the oven to 180°C.
  • Peel and slice the sweet potatoes, Brussels sprouts, and garlic cloves.
  • Spread a piece of parchment paper in a pan and add the sweet potatoes, Brussels sprouts and garlic cloves.
  • Add olive oil, salt, pepper and paprika.
  • Bake them for 30 minutes.
  • Once they are ready, remove the pan from the oven and add the pomegranate seeds.
  • Mix the orange juice and the balsamic in a bowl.
  • Serve by pouring the mixture over the vegetables.
